'Sous Chef Live programme offers fastest way to excellence and culinary greatness' - P Soundararajan, Corporate Exe. Chef, Mahindra Holidays

Q. What prompted Mahindra Holidays to initiate the Sous Chef Live programme?
At Mahindra Holidays, we aim to develop culinary leaders who will take it to the next level in the coming decades. Through the Sous Chef Live programme, we wish to invite candidates who have a passion for cooking and share our drive and enthusiasm. The programme is a one-of-a-kind opportunity that offers the fastest way to excellence and culinary greatness.

Q. How will the candidates benefit from it?
After extensive training and experience that is given during the course, the best candidates will be posted in Mahindra Holiday resorts within three-star to five-star categories spread across India.

Q. What will be the nature of Sous Chef Live programme?
The Sous Chef Live programme will be a two-year course where 15 Sous Chef trainees will be selected during the first two years and 25 from third year onwards. The chosen Chefs will then be taken in. The course will start from August 2011.

Q. What is the course syllabus?
Our candidates are given the best training to perform to global expectations, and hence are subjected to a structured programme. The course ensures culinary leadership through Classic and Contemporary Culinary Techniques, Knowledge of Global Food Menus, Presentation of Culinary Arts, Knowledge of International Cuisines, Effective Culinary Communication and Production Management.
Q. What are the requirements to get selected for the programme? What does the selection procedure involve?
A three-year degree/diploma from a reputed institute combined with two years of work experience from a reputed hospitality organisation is all that is needed to be eligible for the programme. Initially, an application along with an essay explaining why the applicant wants to be a Sous Chef will be screened. If selected, the applicants will go through a preliminary interview and an objective test. Next round involves a subjective test, a power point presentation and the most challenging part, a food trial where the selected candidates will prepare the best flavours, followed by the final interview.

Q. What facilities will be provided for the selected candidates?
Once candidates are selected, we ensure that all their needs are taken care of. Apart from accommodation and food, laptops, Internet access, library memberships, books and tabloids and newspapers will be given to help with assignments and projects as a part of the programme. Uniforms and necessary equipments and tools will be given. They will have access to the Food and Beverage knowledge bank through the intranet of the company.

Q. What sort of certification will be provided at the end of the programme?
The candidates will be enrolled for the ongoing WACS accredited global Sous Chef Certification Programme and will receive certification for Advanced Training in Culinary Management.
