‘India has a rich talent pool; I foresee more opportunities sprouting with time’

Winner of BACARDI Legacy Cocktail Making Competition 2017 and second runner up in ‘The Most Innovative Bartender’ category at the Mumbai cocktail week ’16, Feruzan Bilimoria is a Mixologist at Romano’s, JW Marriott Mumbai Sahar. Bilimoria brings to the table her expertise in innovation of new concoctions or checking up on barrel aged signature concoctions. She has worked under well known bartenders like Pankaj Kamble, Sachin Gowda and Ami Shroff. Kathryn B K speaks to Bilimoria about her passion for the job and the opportunities she foresee as a mixologist.

Q What made you pursue a career as a Mixologist?
Whilst I started my career with the Kitchen department, I always found myself curious about spirits. I believe that I had an innate knack of understanding spirits. To me the world of spirits was enormous. Even today, my quest to learn more is only growing by the day. There has been no looking back ever since I found my passion.

Q How do you feel after being crowned the western region – India champion at the BACARDI Legacy Cocktail Making Competition 2017?
I wouldn’t deny that it feels great to have made it until here. It has definitely gotten me few steps closer to my goal.

Q What opportunities do you see as a Bartender/Mixologist in the future in India?
The bartending and mixology space is still naïve in India. This is definitely indicative of the growth potential of this space and for the ones who want to be in it. India for sure has a rich talent pool. I foresee more and more opportunities sprouting with time.

Q What are the challenges you face being a female bartender/Mixologist?
The challenges I face are similar to any other male bartender.

Q How do you think JW Marriott Mumbai Sahar will help you grow as a Bartender/Mixologist?
JW Marriott Mumbai Sahar not only offers a platform for training, learning, development and exchange of knowledge, but the hotel also encourages nurturing of talent such that it associates growth with the company and realises their personal aspirations. The hotel believes in collective growth and collaborative learning. This is how the hotel has helped me too.

Q What would be your advice to young Bartender/Mixologist who aspires of making it big in the industry?
Remain curious, learning never ends. Be humble and never be afraid to stand out in a crowd..
