Leaders in Sous-Vide products globally, Cuisine Solutions, will be exploring market opportunities and openings in the India market. The company is looking at servicing the Indian market from its Thailand-based facility.

Here in Delhi recently, to participate in the seventh edition of International Chefs Conference organised by Indian Federation of Culinary Associations (IFCA), Felipe Hasselmann, President of Cuisine Solutions said that hardly 5% of Indian industry know about the Sous-vide technology and products, out of which only 1% use it.

Talking about the Sous-Vide technology, Hasselmann said that it is an innovative cooking technique in which food is vacuum sealed and slow-cooked in low temperatures until it’s perfectly cooked. “Sous-vide products are all about innovation, quality, consistency and safety. It can be applied to any type of cooking as long as chefs know how to control time and temperature,” he said.

Although Sous-vide technology is available in India, Cuisine Solutions products are yet to make an entry into India market. “We have a plant in Thailand, and the idea is to start opening a market here, and start developing the product for B2B, which is basically food service, restaurants, onboard food service providers, etc.,” he said.

“By participating in IFCA conference, we wanted to introduce Sous-vide to Indian chefs and communicate its benefits and trends that are going around the world,” he added.

The strategy initially will be to target its global customers like airlines, cruiselines, etc. who have footprints in India, and then take it to hotels, restaurants, etc. Chefs can save up to 50% time in cooking if they prepare with Sous-vide products, he said. By adopting Sous-vide products, hotels can reduce wastage to a large extent, he added.

He said that there is a team of 50 expert chefs at Cuisine Solutions working  overtime on innovations to take Sous-vide to the next level.
