MULTI-PROPERTY EXECUTIVE PASTRY CHEF, JW MARRIOTT MUMBAI SAHAR & JW MARRIOTT MUMBAI JUHU

An expert in dessert making, Chef Santosh Rawat, Multi-Property Executive Pastry Chef, JW Marriott Mumbai Sahar and JW Marriott Mumbai Juhu, oversees the patisserie operations at both the five star hotel properties. In an interaction with Kathryn B K, Chef Rawat speaks about his passion for cooking, especially bakery items.

Being a food enthusiast, Chef Rawat always believed that he would embrace his love for food by pursuing cooking as a profession. As an avid follower of art, patisserie intrigued him since the subject required great attention to detail and craftsmanship and with time, it dawned on him that his forte lies with bakery.

Chef Rawat has been a part of eight hotels pre-opening internationally and has worked with some of the finest hotel brands across the globe such as Hyatt Hotels Corporation and Shangri-La Hotels and Resorts before joining JW Marriott in Mumbai.

Known as an innovator, Chef Rawat curates personalised and customised desserts. One of the few masterpieces made by Chef Rawat was a life-sized replica of a beautiful chandelier made entirely from chocolate that adorned the lobby of JW Marriott Mumbai Sahar. 15 feet in height, the chocolate chandelier was made using 450 kg of chocolate. He has also curated over 40 themed desserts as part of the meetings imagined initiative and 30 edible chocolate arts on canvas.



Though Chef Rawat has created few such masterpieces before, it was the longest trail of chocolate eggs during Easter; April 16, 2017 which helped JW Mumbai Sahar set a Guinness World Record. The initiative was headed by Chef Rawat. The hotel showcased a trail of 20,203 Chocolate Eggs on 170 tables placed in the hotel lobby through the banquet walkway on the day of record setting. Chef Rawat and his team spent over 105 hours over a period of six days,utilising more than 750 kgs of chocolate, crafting the record breaking Longest Line i.e. 1026 metres of Chocolate Eggs. These chocolate eggs were distributed to children from a Mumbai-based orphanage.

For this big achievement, Chef Rawat gives the credit to his entire team, he says, “With the support of my team, we have been able to achieve all of this with great ease and we are proud of setting a benchmark in the industry. We take pride in being able to pin JW Marriott Mumbai Sahar on the global map and be associated with the coveted Guinness World Record institution.”

Chef Rawat who envisions himself as an opinion leader in the bakery space in the near future also has the gallery showcase of 50 designer cakes at JW Marriott Mumbai Sahar to his credit.
