The Leela Bhartiya City Bengaluru brings the much talked about “Tandoori Chicken” for its patrons.

 

Exclusively available at the rooftop Indian fine dine restaurant - FALAK, this recipe is a personally guarded recipe using techniques recreated by the legendary Master Chef Farman Ali who has close to five decades of culinary experience. Chef Farman Ali along Chef JP Singh and Chef Prabhjeet took close to 4 months of time to re-create this magical delight with the perfect mix of spices and herbs and an efficient & precise cooking technique, a technique that is the most crucial element to this masterpiece.

 

Curated by Tandoor specialised chefs, what makes this Amritsari Roasted Tandoori Chicken unique is the technique, the two temperature-controlled tandoors, and the precision with which the masalas are concocted to enhance the flavour and texture of the chicken as the highlight of the dish. The chicken is cooked through a two-step temperature specific method through two different tandoors.

 

Presented using a whole chicken close to 1200 grams, the selection of the chicken is very crucial to deliver the stellar end product. The chefs ensure that the outer flesh is delicately roasted while the meat inside remains succulent and extremely tender while preserving the spices and the juices. This precision of the meat’s perfection is owed to the double marination process, wherein the first marination takes place 48-hour prior, and the second marination is applied 24 hours prior to the final cooking process of the Great Indian Tandoori Chicken which is cooked to perfection in 20 minutes with techniques that produce mystic flavours.
